Kari's Mango Curry Chicken for Crockpot

Note: I doubled the recipe for HC which worked great!

Ingredients:
4 boneless skinless chicken breasts
1 red pepper cut into long skinny strips
1 can (drained and rinsed) garbonzo beans
1 med onion cut into long skinny strips

Sauce:
1 ½ to 2 teaspoons curry powder depending on taste ( I like 2)
¾ cup water
(1) 9 oz. jar mango chutney (sometimes called Major Grey’s)
2 Tbsp. cornstarch
¼ teaspoon pepper
¼ teaspoon salt

4 cups hot rice for serving

Layer chicken, beans, onion, and bell pepper in crockpot. Mix sauce ingredients together making sure that cornstarch has dissolved completely. Pour sauce over ingredients. Cook on low for 6-7 hours or until chicken is no longer pink in center. Serve over rice. Viola- yummy goodness.

i can hardly wait to make this... i think the only thing i don't have is the mango chutney and the curry, otherwise we totally would have had this for dinner tonight.
 
that sounds awesome. can't wait to try this out! we have everything but the chutney as well! i bet this would also be yummy with pork!
 
The chutney is usually found in the condiments section or if the store has a special 'Indian Food' section like Fred Meyer then you might find it there. - The pork idea sounds great!
 
so i made this tonight and it was amazing! i didn't have any chicken breasts so instead i used the chicken halves (bones in) and then shredded it off the bone when the chicken appeared to be done. i let it all simmer together for a bit longer and the flavor was great!

i also added an extra teaspoon of curry... we love curry in our house. and i added a heaping teaspoon of chopped garlic. i know that's not keeping with the indian food flavors, but i couldn't resist.

okay. we finally did this tonight-today as well.

we added potatoes, used pork and extra curry (marc has his own concoction that he throws together) for serving we put on garlic relish for marc and i only. this was sooo tasty. finn liked it alot, and the mango was great because it cut down on the spice, but still had the curry flavor marc loves so much.

i can't wait to have it tomorrow for lunch. the sign of a good recipe!
